The goodies in the shrooms will reach equilibrium with the honey, so the mushroom mass will have the same psilocybin % content as the surrounding honey. So if you use a lot of honey, with little mushrooms then you won't lose much by not eating the mushrooms, but you'd have to eat lots of honey. If you have a lot of mushrooms and just barely enough honey, a lot of the actives will remain in the mushrooms. So, it's best to just eat everything.
The honey makes the mushrooms taste much better! If you cut up the mushrooms into small pieces you can just measure out a volume to eat, for example 1/4 cup. Not that that's a good starting amount, as you'll have to play around with how much to eat.
The way I've done it is filled a jar with as little air space as possible, and pour enough honey to cover the mushrooms.
Everything I've explained so far is about preserving the mushrooms. This works well, since you don't need to refrigerate, they'll last indefinitely, and you'll get blue honey. If you're interested in just the psychoactive honey, and not preserving, then just measure out a dose or a few doses of mushrooms, and pour a good bit of honey on them. Let them sit for probably a few weeks to be sure they've extracted as much as possible. If you used three doses of mushrooms, then use 1/3 of your honey for a trip. Just keep in mind, if you only have the honey, it will be weaker than the original mushrooms, since there will be some loss.
