I see the work as important as the experience and the integration.
Also: I have some nice LeCruset cookware that conducts heat wonderfully, so the reduction will go well. I'll have to watch it closely as a matter of fact. I've been surprised by super fast reductions before. I grew up as the son of a cook, so I've spent untold hours on my feet in kitchens. My fear is clogged cotton filters.
