As my last brew was inactive at 50gr caapi I'd like to experiment once again with adding acid to the process.

Will white WINE vinegar work for this? Or only distilled vinegar?

The ingredients on this one are listed as: "White wine vinegar, water and conservative (sulfur dioxide)". Could the SO2 be dangerous at one teaspoon whenever new distilled water is added?

It also says "Contains sulfites". Again I worry that if they get concentrated it might become a problem.

As for the alcohol in it, it should also evap completely, yes? (MAOIs and alcohol.. you know the drill)


This stuff is way over my ahead, any non chemically-challenged members want to weight in ?

i don't think it would be dangerous as far as ethanol/sulfites are concerned.

but i would highly recommend getting a cleaner source of acid, acetic or otherwise.
