I just started a brew and realized I'm out of white distilled vinegar. All I have is rice vinegar, the ingredients being water, rice, sugar, and salt. Would this be acceptable to use to alter the pH or should I just go with a plain boil and forget about the vinegar altogether?

I ended up foregoing the vinegar and left the final boil on the stove for an extra hour while singing some Lakota songs to it, namely related to Wakan Tanka or "the sacred/divine/great mystery".

I doubt that'll make up for the lack of acidity in my brew but at least I know I tried something extra to get as much out of it and put as much into it as I possibly could. Smile

I think that was a good choice- if one should avoid salt and sugar in their diet before drinking it, I dont imagine having those things added to the brew would be good. Not that I think it would be a health problem, but maybe more like a respect thing.

I'll bet she liked the songs though, must have been nice!
