I'm with Snozz. I like to chew mine. Caps seem to take a little longer to come on and "flatten-out" the experience a bit. One really nice thing about capping them however (besides the taste issue), is that you can throw them in an herbal supplement container and travel with them quite conveniently.

If you want them to last basically indefinitely do the following:
Once you have them cracker-dry, put them in cellophane bags (you can use plastic bags if you are 110% SURE there is ZERO moisture left in them), then get a canning jar of the size of your choice, fill the bottom of the canning jar with an inch or two of fresh desiccant, put your bags of fungi in the jar, cap it tight, and keep it in the freezer. You can bring them out years later (literally), and they will be as good as the day you harvested them. This is pretty handy if you like to grow a bunch at once, and partake at your leisure!

^^^^^yea, the dessicant/mason jar method works great, but I personally have a bit of an aversion to it, but that's as a result of a lame experience with some crappy mushies I got from a crappy source. With my own, I dry them out in a chamber made of a metal colander sitting inside of a metal bowl, with dessicant between the colander and the bowl and a larger colander inverted over the top of the bowl. I then use a computer fan to blow air down through the colanders and through the mushrooms/dessicant.

When it's time to jar them up, as previously stated, I try to avoid dessicants...instead, I make CO2 by mixing vinegar and baking soda in a milk jug. As this bubbles up and creates CO2, you can pour the CO2 out and into your jars by pretending it's invisible water and slowly pouring it out. Make sure not to pour any vinegar/baking soda out of the jug. To test and make sure your CO2 is high enough, try to light a lighter/match in the jar, it should go out due to insufficient oxygen. Once you filled up your jar with CO2, throw on a cap and store somewhere dark and cool.

^^^^Cool preservation tek Snozz. First time I've heard of that one. I'll have to give that a try soon! Just curious about the desiccant aversion... Do you feel that it is insufficient, or that it somehow negatively affects the biochemistry of the fungus?
