Sleep paralysis doesn't only occur while your mind is awake, it's kind of an automated process. Sometimes you notice it, other times not. I've woken up numerous times only to find myself paralyzed and try for minutes to move a limb until finally the sleep paralysis started to wear off. Alternately, I've only once or twice managed to get to SP from being fully conscious, usually it's kind of a dream state transition between being awake in this world and that other one.
What your girlfriend is experiencing sounds very interesting, TimG. You should encourage her to consciously try to remember her dreams, if she's into this stuff. It's not easy work and it may be frustrating at first, but I promise it gets better with time. She's a lucky being to say the least. There's nothing to be afraid of. Sounds like a nice trip to the dream world to me.
There are some interesting dream reports around here which you can find by searching for "astral projection" or "lucid dreaming" or other dream related terms. Those will provide some extra information which you could use, along with some nice reading material.
