Can't you just put freebase Dmt into water then add fumaric acid till all the DMT disolves then evaporate off the water and be left with DMT fumerate?

Yup. It's best if you heat the water, then add acid until pH 4 then stir in freebase.
I prefer doing this with acetone as it's a fast reaction with no evapping.
