Your stomach is always very acidic, so I do not think drinking things like orange juice will make a big difference when it comes to the conversion of Psilocybin to Psilocin. I feel that the dephosphorylation should happen outside the body, i.e. in an acidic tea, to notice a big difference. It is, however, possible that there is some other mechanism at work here, but I have no clue what that should be. I have also noted that tripping on an empty stomach greatly increases the effects. In my experience, it does shorten the duration of the trip, which leads me to assume that the substances are taken up from the stomach faster.
I love blueberries! I feel they go really well with absolutely everything. These wonderful berries have lots of subtle effects, most which are not known how or why happens. When I eat a good amount of blueberries, I have a lot of energy. Not like a stimulation as coffee or ephedra, more like a subtle effect that feels totally natural.

what would the high antioxidant properties of these fruits do with the conversion of Psilocybin to Psilocin?

The antioxidant properties will not do anything with the dephospyrylation, but any acidic substance will do the trick. In any acidic environment, no matter what makes it acidic, Psilocybin will convert Psilocin.
I do not think that antioxidants can reverse any oxidation that has already happened, as an increased effect from antioxidants consumed together with mushrooms might suggest. To add antioxidants to stored mushrooms could be a good idea, as it might prevent or slow down the oxidation of Psiloc(yb)in. I know it is recommended by some to add ascorbic acid to Amanitas before storing. I am far from an expert on this, so maybe someone with more knowledge can comment on it?

that is a good question, evening.. or otherwise, would be very interesting if zinc dust would be able to revert the oxidation of it....

this makes sense. my mother used to dip apple rings in lemon juice prior to dehydration, and it kept them fairly white after drying.

Swim always washed down his ground shrooms/caps with orange juice. It definitely makes the come up faster.
