Molecules degrade, ask any organic chemist, now, every molecule has its own specific properties.

EG, if this is the case, & the information you are looking for is not out there, you have a perfect oppertunity to run your own tests & MAKE this information available.
I, for one, would be interested in seeing some good science applied here. TLC kits are publicly available, some doors may be open to use analytical equipment most do not have access to if you have the right connections as an ochem student, & obviously, as someone who uses brews with some degree of frequency, you have the resources to keep some excess from brews aside & expose the samples to different conditions & determine whether or not any changes are occuring chemically over a given period of time.
If you are willing & able to do some testing I would be very interested in seeing full documentation & results posted here
