I dont think you really need to wait a certain amount of time, I just like testing out the strength of the amanita first. Overdoing these things isnt really fun - could be pretty scary. The combo is surprisingly powerful and I dont think you need a ton of either personally....
You could do them at the same time if you like. I usually like to drink Amanita tea and wait about 2 hours to get an idea of strength and then I will decide if I want more amanita, psilocybin, or both....

Ambrosia and wine are gentler and less strong actually. I am sure they could still put you in the coma sleep if you drank enough.
Going that deep into Amanita territory would be overkill. I dont think psilocybin would save you from the coma sleep at all, but even if it did, trying to use those levels of amanita would not be smart or fun. Sounds very unsafe.
I say try out this combo and see how powerful it is.... It might surprise you. You dont need much of either. I would say a light dose of each is perfect - a light dose of each turns into a really strong combo and will take you plenty deep. I've had animals start talking to me and cedar trees turn into giant brugmansia flowers that talked to me... Seen dead family members and got sucked into portals in the sky with this combo. It is a serious combo.
BTW - only amanita related death in the last century was a man who went into the coma like sleep then froze to death outside. It is a real deep sleep.
