Well first and foremost, I'd recommend Dragon Ball Z if we're talking about long series', but other than that these days I mostly like watching short series' that are usually less than 50 episodes. Keeps things fresh, plus it seems like more effort goes into making them. My favorites are;

Samurai Champloo
Cowboy Bebop
Soul Eater
Afro Samurai
Samurai 7
Mushi Shi

I've heard that Full Metal Alchemist as well as Deathnote are really good too but have yet to watch them. Also, literally ANY studio Ghibli movie is a masterpiece, my favourite being Spirited Away.

These are all the best ones I can think of right now and I'd strongly recommend them even to people who don't usually watch anime. By the way, every one of the things I've mentioned have amazing english dubs. Definitely check 'em out.

Welcome to the NHK is really good. My favorite thing about it is how unique it is. It doesn't follow any cliches, there's no ninjas jumping 50 feet in the air or mechs or anything like that. It's a realistic and original story about a hikikomori trying to cope with life. It's a mix of drama, comedy, and romance, and is VERY entertaining. Check it out!

Death Note blew me away too.

Rurouni Kenshin OVA Series (Samurai X).

"Becoming a person of the plants is not a learning process, it is a remembering process. Somewhere in our ancestral line, there was someone that lived deeply connected to the Earth, the Elements, the Sun, Moon and Stars. That ancestor lives inside our DNA, dormant, unexpressed, waiting to be remembered and brought back to life to show us the true nature of our indigenous soul" - Sajah Popham.

from the shows i have a few in mind like :

Berserk, Noein !!! (one of the best shows if someone ask's me), Trigun, Claymore is a great one..also other's like Tengen Toppa Gurren Lagann, an sf happening on a desolate planet where warriors embody themselves in some type of large mecha robots..Hellsing is also a good animation and interesting story ! there are many others but they do not come in mind quickly.

from the animated movies i have also few to recommend :

Mind Game 2004, great animation and really reallly good story. All the Studio Ghibli stuff like Spirited Away, Howl's Moving Castle, Porco Rosso, Nausica of The Valley of the Wind and more...they are all with serious content and some very wise words in there. Aachi & Ssipak, korean animation with alot of anime influences. Then there is Dante's Inferno : An Animated Epic supported by Electronic Arts : )

i will try to add few others when they come to mind

What I've already seen and can recommend wholeheartedly:
AKIRA
Nausicaa
Princess Mononoke
Spirited Away
Paprika
Ghost in the Shell
Serial Experiments Lain
Cowboy Bebop

What I just finished watching last night:
Neon Genesis Evangelion. I can't believe noone has mentioned this yet, this is the most powerful and deep anime I've come across so far. When you start watching it it just seems like another mech battle stuff, but just hang on and watch the whole series and then the movie "End of Evangelion". I won't spoil anything but it's the most mindblowing analysis of the human condition, with clear psychedelic influences. Really powerful stuff..

What I intend to watch next:
Fullmetal Alchemist
Armitage III
Ergo Proxy
Wolf's Rain

just to share my excitement, i just finished the first season of ghost hound. wow!

it starts with a kid going to therapy to release his psychological burden and nightmares from when he was abducted by a kidnapper as a young child, during which his sister dies.

as things progress he starts having obe's, now in season 2 the concept of shamanism was deliciously introduced. it seems an anime that most here would really enjoy, mushishi was along these lines aswell, spiritual practices. Smile
