Too much lemon juice in the mimosa! Options

Hi all,

I dreamt that I made a mimosa brew with 60g ground mimosa using a lot of lemon juice (300ml per 1 litre of water) on the first pull and then one lemon for each litre water on the next two pulls. The resulting liquid was reduced and after decanting left around 400 ml. I dreamt that I tasted the resulting brew and it was absolutely awful, far too acidic. I'm not sure I would want to drink that.

I wondered if anyone had any solutions to improve this tea, or am I better to just start again? I wondered about adding bicarbonate of soda? Or diluting it, say to 800 ml?

It's a shame to throw it away...

Why not extracting from it?

Or yeah you can neutralize it with some sodium bicarb. Dont add too much. The reaction will form sodium citrate, which is used as food additive in the food industry, so it should be ok to drink. I dont know how it tastes but I guess possibly better than very strong lemon mimosa juice.

For sure dont throw it away.
