Using cooking oils for extractions Options

My cat was wondering why cooking oils are not more frequently used in extractions teks. Is it because they are messy and form emulsions too easily? Or are they not great as solvents? For example, is DMT freebase not appreciably soluble in oil, or are common DMT salts (acetate, citrate, fumarate, etc.) too soluble in oil, thereby preventing salting out?

Would appreciate any knowledge on this.

Messy, too viscous, not great solvents for DMT, and turn into soap when contacting lye water.
Just how thick they are alone would make me not want to work with them.
The DMT salts we make would not be soluble in cooking oil.
