Can I delay fruiting?

I have a myco bag that is colonized with Equadorian spores. I added casing and put in the fruiting bag 10 days ago and there are pins showing now,quite a few actually. I'm due to go on an unexpected holiday for 7 days tomorrow so I won't be around,can I stall the process at all? I was thinking of maybe of putting the bag in the fridge. I don't have the option of letting someone else take care of it either.
I was so pleased to see pins,it would be a shame to lose them!

I've heard of mycelium surviving below freezing temps, less than -20 C.

You can delay fruiting with fridge temps, but those pins will probably abort. I'd remove them before you put the mycelium back into fruiting conditions.
