hi iv done an acid cook with hydrochloric acid as it said to do in the dmt handbook but my ph level was around 3.4 for the acid cook then i added the caustic soda but i couldnt get the ph level to go over 11.2 does anyone know why this is or is there any other way of getting the ph up to 12 ?? please help thanks

What were you using to measure the pH? Maybe the equipment was faulty, I dont see a reason why it wouldn't go above 11.2. I suggest that you get a glass of water and try getting that to a pH of 14, and if you can't, then you'll know that it is probably how you measure the pH that is the issue.
Either way, do a pull with your solvent and see what you get, a pH of around 11 should still pull the alkoloids.
