I never realized how safe Fumaric acid is considered...

I'm not sure how much is needed to convert a gram of Freebase Caapi to Salt,
but I am guessing that one gram Funaric Acid would be plenty?

I guess one could check the PH as a determining factor.

And if using Fumarate spice, maybe Harmala Fumarate would be a nice synergy?
